The Late-Night Surcharge
Charging extra because a booking you agreed at midnight happens at midnight. If the start time was known when the price was quoted, the price already accounts for it. A genuine extension beyond the agreed window is different and is priced at the hourly rate — which is exactly why, for a night likely to run long, the overnight is the cheaper booking from the outset.
Per-Venue Supplements
An extra charge because you are staying at a well-known hotel. Nothing about a Golden Mile property makes the booking cost more to deliver — these hotels have received discreet guest visits since the town's jet-set era began in the 1950s and the protocol is identical everywhere. It is a charge for your perceived budget, not for anything real.

For a travel companion, flights, accommodation and meals are direct costs you cover — booked by you, in your name, at whatever standard you choose. The day rate sits on top of them. Not expected. The quoted rate is the rate, and no companion will treat the absence of a tip as a comment. Spain is not a percentage-tipping culture in general — rounding up is the norm even in restaurants — and this industry follows the same convention. It is genuinely optional.
If You Want To Anyway
Cash, at the end, quietly, with no announcement. That is the whole etiquette. Regular clients sometimes do it after an evening that went particularly well, and it is received the way any thoughtful gesture is.
